Your day to day
Join us as our new Sous-Chef Banquets M/F :
Your main duties will be to :
Establish and prepare menus and compose dishes for the Banqueting/Events activities.
Organize, coordinate activities and preparations, ensure that recipes are respected.
Take part in the production with the Kitchen brigade.
Supervise and give instructions to the Kitchen brigade.
Participate in meetings with Heads of Department and with the Events & Catering team.
Control inventory management and food cost.
Supervise your service’s staff (administration, work time, planning).
Regularly analyse the activities and trends of the competition.
What we need from you
With a degree in Culinary Arts, you have minimum 5 years of experience in a similar position within a hotel establishment of the same category (4- or 5-star) and/or in a luxury catering company. You are used to manage large events and to propose diversified offered. You have excellent knowledge of HACCP norms and hygiene standards as well as strong culinary skills and capacity to exploit new trends and cooking methods.
You are fluent in French. Mastering English and a third foreign language of one of our target markets (Germany, China, India, Italy, Middle East, Netherlands, Russia) is highly desirable.
Highly organized and focused, you are acknowledged for your rigor, reactivity and for your ability to work under pressure. You like working in a fast-paced environment and are autonomous and flexible. You aim to share your passion and knowledge with your guests and your colleagues and are willing to help when needed.
This position is to be filled as of October 2020 and is opened to Swiss citizens and EU passport holders.
