F&B Manager (m/f)
Profile:
Minimum 4 years experience in the upper class hotel or resort industry
Active knowledge of English and German language, both written and spoken
Experience in managing and motivating employees
Excellent organizational skills and communication skills
Positive attitude and personal appearance
Guest oriented with strong operational background in different F&B outlets
Responsibilities:
Ensure that hygiene and quality standards are maintained and to monitor the quality of food,
beverages and the buffet
Ensure smooth service in the various restaurant outlets
Confer with Food & Beverage, the Bar and Kitchen during day-to-day business
Draw up the menu and calculate its costs with the Executive Chef
Draw up wine lists and special menus
Monitor personnel expenses, budgeting and forecasting
Manage a team of cca.80 staff
We are looking for the following position:
Executive Chef (m/f)
At least 5 years experience in 4 star hotel companies
Specialized in Mediterranean Cuisine
Knowledge about international cuisines
Food presentation and showmanship presentation
Experienced in managing few F&B outlets with specialized thematic
international experience is an advantage
Strong organizational and leadership skills
Responsible and proactive approach
Active knowledge of English, written and spoken
Responsibilities:
Coordinates and supervises personnel with responsibilities for hiring, induction, orientation and discipline
Train and manage kitchen personnel and labour cost control
Ensure quality of food preparation and presentation according to standards
Food cost and stock controlling
Recipe calculation and menu creations
Ensure proper safety and sanitation in the restaurant
Ensure proper equipment operation
Manage a team of cca. 40 staff
