We are an Awards Winning Italian restaurant based in Maine, USA, with focus on simplicity, seasonality and craftsmanship. Our food is simple, healthy and clean. We make everything from scratch.

In order to apply for this position the candidate needs:
– to be able to speak English;
– experience in high end or fine dining restaurants or equivalent (doesn’t need to be Italian Restaurant);
– working experience outside Italian territory (if an Italian applicant);
– a clean criminal history to be able to get the visa;

This position has starts on April 1st, 2017. It has a starting period of 9 months, and it ends December 31st, 2017.
Pizza Chef Job Description/Responsibilities:
• Be able to make and control at room temperature the pizza dough;
• Be able to bake pizzas in less than 90 seconds with high temperature oven;
• Able to bake 4 pizzas at the same time;
• Ability to open the pizza balls according to Neapolitan tradition and craftsmanship tossing the dough by hands (no utensils);
• Prepare the line for the pizza station;
• Apply FIFO;
• Be clean and neat at all the time, HYGENE is a must in the kitchen!
• Be able to make pasta from scratch (ravioli, tagliatelle, gnocchi), bake other food in to the wood oven, like bread, burger, sandwiches, and also side dishes, like salads and mussels;
• Manage pizza station operations and orders and maintain pizza supplies;

Neapolitan Pizza Chef
The candidate needs to understand the culture, the philosophy of Neapolitan Pizza and able to delivery a product according to the statute of VPN Americas Association, following our recipes and method.
The candidate does not need to be from Naples, but must be familiar with the Neapolitan pizza.
Cooks/Chef Job Description/Responsibilities:
• Be able to make pasta from scratch (ravioli, tagliatelle, gnocchi), and bread, bake other food in to the wood fire oven, like bread, burger, sandwiches, and also side dishes, like salads and mussels;
• Able to create Specials or Dish of the Day with local produce available;
• Manage Prep station operations and orders and maintain kitchen supplies;
• Be clean and neat at all the time, HYGENE is a must in the kitchen!
• Apply FIFO;
• Good attitude and communication skills since the kitchen is open facing the dining area;
• Must speak English!
• Clean work tables, and work areas;
• Keep the kitchen clean following listened opening and closing jobs;
• Must know food menu, respect and represent Company Philosophy.
Requirements for Pizza Chef/Chefs/Cooks:
One year full time Neapolitan Pizza Chef experience (if applying for Pizza Chef Position) in a full-service fine dining restaurant;
• One year full time Cook/Chef experience (if applying for Chef Position) in a full-service fine dining restaurant;
• Must be able to work quickly in a confined area and stand for extended periods of time;
• Must be able to assist guests and possess great guest relation skills;
• Must speak English;
• Must have appropriate language, and body language;
• Excellent verbal communication and interpersonal skills with supervisor/manager/employer;
• coming from food and hospitality school is a plus and highly appreciated;
• be aware of hygiene and safety standards to work in a restaurant: be always clean, clean looking, no use of alcohol and drugs, no smoker (random tests take place throughout monthly blind checks when you are at work);
• Ability to lift up to 50 lbs. as needed;
• Continuous use of hands and arms;
• Continuous bending, reaching and twisting;
• Willing to take care of wash your own utensils and pots when it is slow season;
• Have a clean criminal history;
• Have a address and phone number working at all the time where to be reached;

Because this is a small restaurant and volume varies from high season to slow season, we need flexible people on duties. The Pizza Chef needs to learn how to make pasta, salads, prep; the chef/cook needs to learn how to open and bake pizzas, do prep, and wash pots and pans.
Bartender/Barista/Front of the House Job Description/Responsibilities:
• Greet customers, give them menus, and inform them about daily specials
• Take drink/food orders from customers
• Pour wine and serve draft and bottled beer and other drinks and beverages to the wait staff or directly to guests; makes cappuccinos, espressos;
• Mix drinks according to the company recipes
• Check identification of customers, to ensure that they are of legal drinking age
• Clean bars, tables, and work areas
• Operate cash registers, collect payments from customers, and return change
• Manage bar operation and order and maintain liquor and bar supplies
• Must learn drink and food menu, respect and represent Company Philosophy
Requirements for the bartender/barista/front of the house:
• One year full time bartending/barista experience in a full-service fine dining restaurant;
• Must be able to work quickly in a confined area and stand for extended periods of time;
• Must be able to assist guests and possess great guest relation skills;
